Folate is an important element that helps to reduce the risk of catching a virus. Tomatoes have a high content of folate as well as a troop of other infection fighters such as iron, and C and A vitamins. The refreshing taste of tomatoes can be enhanced by mixing them with a few other vegetables such as celery and even spinach. The following recipe is just a basic formula that you can modify and include your favorite stuff (or those fruits and veggies that you have at your elbow).
Core and cut about 1.5 kg of ripe tomatoes. Chop 1/3 cup of onion and 1 cup of celery (leaves included), and add them to tomatoes. Place vegetables into a sizable saucepan and simmer everything for about 30 minutes. Then press the mixture through a sieve to separate the juice from solids. Cool the juice before drinking and store the rest in the fridge. You can even freeze the remnants if you can’t use all the juice straight away.
